fix(t_video): extract portrait MOV rotation from display matrix side data
...
Modern iOS MOV files don't use the 'rotate' metadata tag but instead use a display matrix in the video stream's codec parameters side data.
- Add `get_stream_rotation` to parse `AV_PKT_DATA_DISPLAYMATRIX`.
- Fix video thumbnails being incorrectly generated for portrait MOVs.
- Apply rotation swap to video dimensions in `get_video_dimensions`.
