Armin Ronacher f6f3a027e9 feat(coding-agent): decouple Nix model catalog pinning from releases ...

Revert the release workflow and announcement changes. A Nix workflow builds the flake on relevant pull requests and daily, and after pi.dev publishes a catalog from main it replaces the pin only when the current one no longer hydrates main, then commits it.
