Kite 01cf7ff8b9 test(diff): guard quoted-path parsing through a real git subprocess (#1516) ...

The existing non-ASCII e2e never reaches the quoted-path decoder because
core.quotepath=false unquotes it. Add a Unix-only test with a double-quote
and backslash filename across the workspace, commit and range providers and
the untracked path.
