Add a Release workflow that runs nightly (6 AM UTC) and supports manual
dispatch. It computes the next patch version from the latest v* semver
tag, builds CLI binaries for all platforms (Linux amd64/arm64, macOS
aarch64), creates a git tag, and publishes a GitHub Release.
Also adds a next-version subcommand to release.py to centralize version
computation, and updates install.sh to default to the latest GitHub
release instead of devel.

* refactor(docker): rename server image to gateway
Rename Dockerfile.server to Dockerfile.gateway and update all image
references from openshell/server to openshell/gateway across Helm
charts, Kubernetes manifests, mise tasks, build/deploy scripts, CI
workflows, and documentation.
The underlying Rust binary (navigator-server) is unchanged -- this
rename only affects the Docker image name and Dockerfile.
* fix: catch remaining server->gateway references in docs and comments
The reusable Docker build workflow runs under sh by default, and the compute-version step only uses a single command substitution. Removing pipefail avoids the illegal option error without changing the explicit tag-fetch setup.
Pass the computed cargo version through Docker and cluster packaging paths so deployed clusters report the built artifact version while keeping latest and explicit version tags aligned.
The gsactions/dco-check action repository was deleted, causing every DCO
workflow run to fail with startup_failure. Replace it with
contributor-assistant/github-action pinned to a commit SHA, matching the
pattern used by NVIDIA-NeMo/DataDesigner.
